Wild Rice Recipes

Wild rice has a nutty, chewy texture that we find to be delicious. It holds up really well in soups and stews. We often just grab a handful and throw it in the pot with a lamb or beef stew or even onion soup. It adds so much to a simple meal. Many people serve it with wild game such as duck or goose. You can combine it with other grains and rice to get a completly new recipe.

Basic Recipe
 Wash 1 cup uncooked wild rice. Add to 4 cups boiling water, salted to taste. Return water to a boil and stir. Reduce heat and simmer, covered, 55-60 minutes or until grains puff open. Uncover and fluff with a fork. Drain any excess liquid and serve. For additional flavor, cook in chicken or beef broth.
Wild Rice Stuffing
Ingredients:
1-cup raw wild rice
3-cups chicken broth
1 cup diced celery
1-cup minced onion
4-oz can mushrooms
1/2-cup melted butter
1/2-teaspoon salt
1/2-teaspoon sage
1/2-teaspoon pepper
1/2-teaspoon thymeCook rice in boiling broth about 30 minutes. Saute celery, onions, and mushrooms in butter for 2-3 minutes. Combine all ingredients. Put the stuffing in the bird. The rice will continue to cook in the bird. Makes about 6 cups or enough to stuff a 10-pound turkey. HC Ranch Wild Rice is also great with any wild game.
Cinnamon Wild Rice Pudding
Ingredients:
2-cups cooked wild rice
2-cups hot half-and-half
1/2-cup maple syrup
2 eggs
1-teaspoon vanilla
3/4-cup raisins
1/2-teaspoon cinnamon
1/4-teaspoon nutmeg
additional sugar/cinnamonCombine all ingredients. Turn into a 1-1/2 quart casserole. Sprinkle with cinnamon and sugar. Bake at 350 (F) for 1 hour or until set. Serve warm or chilled. Makes 8-10 servings.
Mushroom Rice Pilaf
 This is an uncomplicated rice Pilaf that you will want to make again and again. You can always add onions, herbs, and other ingredients, but it is delicious just as it is listed here.
Ingredients:
5-cups water
1-cup wild rice
1-cup white rice
2 teaspoons chicken bouillon
1-4 oz. can mushrooms
1-8 oz. can mushroom soupPut 4 cups water, 2 teaspoons chicken bouillion, and one-cup wild rice in a saucepan. Bring to a boil, reduce heat and simmer for 35-40 minutes. Add 1 cup white rice and one cup hot water. Bring back to a boil. Reduce heat and simmer for approximately 15 minutes. The white rice should be soft and the wild rice should be soft and opening up. Stir in one can of mushrooms (do not drain the liquid), mushroom soup and continue to simmer until heated through. The dish is now ready to serve and enjoy!!
